Cabbage rolls

Recipe (4 servings) ingredients:

For the filling:

  • 1 green cabbage
  • 200g ground pork
  • 200g ground beef
  • 200g Italian sausage
  • ½ cup jasmine rice, well rinsed
  • 1 onion, finely chopped
  • 1 garlic clove, minced
  • 1 egg
  • salt, pepper

Remove the cabbage leaves carefully without breaking them. Wash them well and cut off any parts which are very thick. In a large cooking pot, boil some salted water and blanch the cabbage leaves in it for about 3-4 minutes. Remove and place them in ice cold water right away in order to prevent them from cooking any further. Remove them from the ice cold water and place them on a dry towel. In a large bowl, combine the minced pork, beef and the inside of the sausage. Add the jasmine rice, chopped onion, minced garlic and egg. Season with salt and pepper and mix until well combined.

For the sauce:

  • 400g crushed canned tomatoes
  • 1 tsp cinnamon
  • 2 tsp brown sugar
  • 2 tbs balsamic vinegar
  • 200ml water

In a food processor mix together all the ingredients for the sauce. Once well mixed, pour some of it on the bottom of a baking dish and set aside.

On a clean work surface, placed the cooked cabbage leaves. Place about 2 tbs of the meat mixture on the top of each leaf (the quantity will always depend on the size of the cabbage leaf) and roll tight. Place in the baking dish, with the seam faced downwards. Repeat this procedure until the meat mixture is finished. Pour the remaining tomato sauce over the rolled cabbage leaves.

In the meantime, preheat the oven to 170°C. Cover the baking dish with aluminum foil and bake for about 1 hour, until the meat and rice is cooked through.
