Tartiflette

Tartiflette is a French dish from the Savoy region in the French Alps. It is a typical winter dish, especially after skiing all day long or hiking outside the cold. However, its simplicity in combination with its delicious taste, it comes handy for me for any time of the year !

Traditionally, this dish can be heavy to eat as it contains not only potatoes and cheese, but also lardons (bacon) and even cream and butter. However, in my version, I keep it very simple and lighter.

Recipe (4 servings) ingredients:

  • 1.2Kg potatoes peeled and cut into slices
  • 1Kg Reblochon cheese cut in slices (you can also use Brie or Camembert in case you cannot find the Reblochon)
  • 1 onion finely chopped
  • 1 tbs olive oil
  • salt, pepper

In a large skillet, saute the onion for about 4 minutes over medium heat. Add the sliced potatoes and let them cook over medium heat until a golden color is acquired. Stir occasionally and be sure that all potatoes are cooked evenly and become soft. This will take about 30 minutes.

In the meantime, preheat the oven to 150°C. Place the potatoes and onion into an oven-proof gratin dish or a shallow casserole dish. Scatter the Reblochon slices over the top and bake for about 20 minutes, until the cheese is melted and the tartiflette is golden o the surface.

Serve hot from the oven with green salad, cornichons (gherkins), pickled onions, crusty bread and a glass of a delicious red wine ! Enjoy !

  3. Your site is beautiful Marios! I’m quite inspired by your gorgeous recipes. I remember is previous carb-light days making tartiflette with cauliflower instead of potatoes. Despite no longer being carb free, the cauliflower version is hearty and delicious, but is another way to lighten things up a bit. I look forward to seeing what else you come up with! x
