Chicken skewers with aubergine puree
Recipe (4 servings) ingredients:
For the skewers:
- 4 chicken breasts
- 1 garlic clove (minced)
- 2 tbs paprika
- 2 tbs olive oil
- salt, pepper
Dice the chicken breast and let them marinate for about 30 minutes in a mixture of garlic, paprika and olive oil. Place them on the skewers and season with salt and pepper. Place the skewers on a grill pan and let them cook for about 10 minutes on each side (until golden brown color).
For the puree:
- 4 aubergines (diced)
- 2 tbs olive oil
- salt, pepper
- fresh parsley for garnish
Peel the aubergines. Pour the olive oil on a pan and cook the aubergines for about 35-40 minutes on medium heat. Season with salt and pepper and stir from time to time. Let them cook until they are very soft. Serve the skewers on top of Greek yogurt and garnish the aubergine puree with fresh parsley.
