Meat loaf in tomato sauce
Recipe (4 servings) ingredients:
For meat loaf:
- 500g mixed minced beef/pork
- 1 onion finely chopped
- 2 garlic cloves (minced)
- 2 slices of white toast bread (without the crust)
- 40ml milk
- 30g parmesan (grated)
- 1 egg
- 1/3 cup finely chopped parsley
- 1/3 cup finely chopped dill
- salt, pepper
- 800g crushed canned tomatoes
- 100ml white wine
Preheat the oven to 200°C. Soak the bread into the milk for about 5 minutes (or at least until the whole quantity of milk is absorbed). Smash the soaked bread with a fork. In a large bowl mix with hands the beef, onion, garlic, parmesan, dill, parsley, egg and bread (till compact). Season with salt and pepper. Give the shape of a loaf.
For the sauce:
- 2 carrots coarsely chopped
- 1 celery rib coarsely chopped
- 2 tbs olive oil
Sauté carrots and celery in medium heat until tender (for about 10-15 minutes).
Layer the cooked vegetables on the bottom of a baking pan. On top of them place the meat loaf and put it in the oven. Let it cook for about 20 minutes. Take the pan out of the oven (be careful it will be hot!) and pour the wine over the meat loaf. Cook for about 10 more minutes. Repeat the same with the tomato sauce (take the pan out and pour over the meat loaf) and let it cook for about 10-15 minutes until the meat is moist and cooked through. Use some basil leaves for garnish.

Meat loaf is an easy dish to pair. Try any medium body fresh and fruity dry red wine or even a redish rose and you will not be disappointed. Such kind of wines can be served a little bit cooler (13-15 C) than all other reds so are perfect match even in summer.
If you are heading for red wine try Nemea from Ktima Driopi by Agiorgiko grapes from Nemea region . If you are more in a la vie en rose mood try Theopetra Estate’s rose made by Limniona (indigenous greek grape) and Syrah grapes from Meteora region!
