Baked salmon in aluminum foil
Recipe (4 servings) ingredients:
- 4 salmon filets (skinless)
- 450g asparagus
- 1 garlic clove
- 1 lemon finely sliced
- fresh dill
- 2 tbs olive oil
- salt, pepper
Preheat the oven to 200°C. Place 7-8 asparagus in the center of aluminum foil. Drizzle 1 tbs olive oil over the asparagus and season with salt and pepper. Rinse the salmon fillets and season each side with salt and pepper. Layer each fillet over the asparagus and sprinkle the upper side with 1 tbs olive oil mixed with minced garlic. Top with fresh dill and a couple of lemon slices. Wrap each foil side inward over salmon fillets and then fold in top and bottom of foil to enclose. Bake for about 30 minutes, until salmon is cooked. Serve with boiled vegetables and/or mashed potatoes.
Unwrap and enjoy with a cold glass of white wine !

Just like the pairing with asparangus risotto, Sauvignon Blanc is an excellent choice!
In this case because of salmon’s distinctive flavor I not will suggest Malagouzia as I did for risotto. What in my opinion will pair well is Ntroumo by Kir Yianni winery from a single vineyard in Amyndeon. Ntroumo is a medium to full bodied Sauvignon Blanc with less intense aromas and acidity that will wipe out the fishy flavor of salmon and leave a pleasant aftertaste . By the way Amyndeon has the the coolest climate from all other wine regions in Greece so wines produced in this area are crispy and fruity wines with high acidity.
If you are brave enough and want to get out of the norm try a sparkling wine like Paragka from Kir Yianni winery and do that extra step!
And don’t forget, as Marios points out, always keep the wine chilled!!!

This is one of my favorite fish recipes. I use all kinds of fish to do this. I switch up the herbs and seasoning, but always use fish, lemon, and asparagus. So delicious and low carb — partner with some cottage cheese or a nice green salad.
