Lime chicken with avocado
Recipe (4 servings) ingredients:
For the chicken:
- 4 chicken breasts (skinless, boneless)
- 1/4 cup lime juice
- 2 tbs olive oil
- 1/4 cup finely chopped parsley
- salt, pepper
Add the lime juice and the olive oil in a small bowl and mix them together with the fresh parsley. Season with salt and pepper. Add chicken and let it marinade for about 20 minutes. In the meantime, prepare the avocado sauce.
For the sauce:
- 4 ripe avocados, diced
- 1/2 cup finely chopped parsley
- 2 tbs lime juice
- 1 garlic clove
- salt, pepper
Add avocado, parsley, lime juice and garlic into a small bowl and mix. Season with salt and pepper.
Place chicken on a grill pan and cook each side for about 6-7 minutes (until each side is cooked). Remove it from the grill and top it with the avocado sauce. Serve with sweet potato fries !
